Jobing Description

POSITION OBJECTIVE
Oversee all day-to-day operations of assigned outlet(s). Participate in planning of the Culinary Department. Ensure that all processes and procedures are adhered to according to Reunion Standards.

ESSENTIAL JOB FUNCTIONS
* Create menus for various purposes.
* Execute all mise en place functions from set up to scheduling, ordering and receiving.
* Control Food & Labor Costs against Budget
* Continue to be on the cutting edge by conducting new product and trend research
* Maintain all sanitation and HACCP documentation
* Communicate effectively with peers, management, line and front of the house employees
* Use the Employee Handbook and Reunion philosophy as a tools to effectively coach employees
* Create professional working relationships amongst all Reunion employees
* Conduct/Attend meetings including: Daily Riot, Service Line up, Chef’s Meeting, Weekly Staff Meeting, monthly department meetings

EDUCATION/EXPERIENCE
* Must have a minimum of 3 years culinary management experience in an upscale Restaurant, Hotel/Resort or Club environment.
* Culinary Arts degree desired

REQUIREMENTS
* Reading, writing and oral proficiency in the English language.
* Must be willing to work a flexible schedule in order to accomplish all major responsibilities and tasks.
* Must be a self-motivator and motivator of others.
* Must work in a safe, prudent and organized manner.
* Must have the ability to handle multiple tasks at one time
* Must have mathematical skills, computer software aptitude and some hotel and Club operation knowledge.
* Serve Safe, Sanitation and HACCP proficiency
* Must be proficient in all aspects of the culinary arts. i.e. high volume banquets to fine dining and bistro concepts
* Able to clearly understand and effectively manage all aspects food, labor and operational cost.
* Be able to work in a standing position for long periods of time.
* Be able to work in a hot, cold, wet, humid and loud environment for long periods of time.
* Be able to reach, stoop, bend and lift up to 40 lbs.
